  • 2 1/2 cups of flour
  • 1 1/2 cups of granulated white sugar
  • 1 (8-ounce) OR 1/2 (15-ounce) can of pumpkin
  • 1 cup of white chocolate chips
  • 1/2 cup of softened butter
  • 1 egg
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of ground nutmeg
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ginger
  • 1/2 teaspoon of salt


  1. Preheat oven to 350 degrees F.
  2. Combine sugar with butter and blend well in mixing bowl.
  3. Add pumpkin, vanilla, and egg; beat until smooth.
  4. Combine cinnamon, nutmeg, ginger, salt, baking powder, baking soda, and flour in separate bowl; add to pumpkin mixture and mix until smooth.
  5. Fold in white chocolate chips.
  6. Make tablespoon-sized dough balls and place on greased cookie sheet.
  7. Bake for about 16 minutes or until edges are firm.


Chocolate chip pumpkin cookies

The baking time and temperature are the same for all the following variations.

  • Replace white chocolate chips with regular chocolate chips.
  • Skip white chocolate chips and drizzle glaze on top of cookies after baking. Mix 2 cups powdered sugar, 1 tablespoon melted butter, 3 tablespoons of milk, and 1 teaspoon of vanilla until smooth.
  • Top with cream cheese frosting after baking.
  • Add 1/2 cup of pumpkin seeds to batter before baking.
  • Add 1/2 cup of dried cranberries to batter before baking.

Crunchy Pumpkin Sugar Cookies

If you prefer crunchy cookies, you'll love this pumpkin-flavored crispy treat.

Pumpkin sugar cookies


  • 3 cups of flour
  • 1 1/4 cups of granulated white sugar
  • 1/2 cup of melted butter
  • 1/2 cup of canned pumpkin
  • 1/2 cup of coconut oil
  • 2 teaspoons of baking soda
  • 2 teaspoons of cinnamon
  • 1 teaspoon of vanilla
  • 1 teaspoon of salt
  • 1/2 teaspoon of allspice
  • 1/4 teaspoon of nutmeg


  1. Preheat your oven to 350 degrees F.
  2. Mix flour, cinnamon, allspice, nutmeg, baking soda, and salt in large bowl.
  3. In separate bowl, mix pumpkin, sugar, vanilla, oil, and melted butter.
  4. Add wet ingredients to dry ingredients and mix well.
  5. Place 2-tablespoon sized dough balls on cookie sheet.
  6. Bake for 12 to 15 minutes or until cookies start to brown.


Pumpkin spice cookies

All cookie variations should be baked for the same amount of time and at the same temperature as the original recipe.

  • Sprinkle tops of cookies with powdered sugar.
  • After baking, top cookies with a maple glaze. Make it by mixing 1 1/2 cups of powdered sugar, 1 tablespoon of water, 3 tablespoons of maple syrup, and 1 teaspoon of ground ginger until smooth. Then sprinkle with ground nutmeg.
  • Add 1/2 cup of macadamia nuts to batter before baking.
  • Add 1/2 cup of raisins to batter before baking.
