Checking for Doneness
To be sure your rib roast is fully cooked, check the internal temperature of your meat. For rare doneness, your meat thermometer should read 125 degrees Fahrenheit. For a medium-rare roast, make sure the internal temperature is at least 135 degrees Fahrenheit; when cooking roasts to medium doneness, your meat thermometer should read at least 145 degrees Fahrenheit. Don't forget to allow your roast to rest before you slice and serve it.
