  • 2 ripe avocados
  • 1 cup vegetable broth
  • 1 tablespoon lime juice
  • 2 tablespoons crème fraîche
  • 3/4 teaspoon salt

  • 1 1/4 to 1 1/2 cups water


  1. Slice the avocados in half and remove the pit. Peel the skin from the avocados and slice them into pieces.
  2. Place the avocados, broth, lime juice, crème fraîche, salt, and cilantro in a blender.
  3. Pulse the blender a few times to combine the ingredients, then blend on high for two to three minutes.
  4. Scrape down the sides of the blender and slowly add the water, stopping to blend every 1/2 cup until the soup reaches the desired consistency.
  5. Store covered in the refrigerator up to three days before serving.

Cold Roasted Red Pepper Soup

  • 7 red bell peppers
  • 1 medium sweet onion
  • 1 small potato
  • 2 tablespoons olive oil, plus more for brushing the peppers
  • 1 teaspoon ground cumin
  • 3 1/2 cups water
  • 2 cups chicken broth
  • 1 medium tomato


  1. Slice the peppers in half and remove the seeds.
  2. Brush the peppers inside and out with olive oil and arrange face down on a baking sheet.
  3. Place the peppers in an oven preheated to 450 degrees and roast for 10 minutes, or until cooked through and slightly blackened on the edges.
  4. Remove the peppers from the oven and peel off and discard their skins.
  5. Chop the onion and potato into small pieces.
  6. Heat the remaining olive oil in a large pot and sauté the onion and potato until tender.
  7. Add the peppers, cumin, chicken broth, and water and simmer for approximately 20 minutes.
  8. Peel and seed the tomato.
  9. Purée the soup, along with the tomato, in a blender on high until thoroughly combined.
  10. Chill a minimum of four hours and up to two days before serving.
  11. Serve with lime wedges and sour cream.
